the first public place that served coffee, "kiva han", dates back to 1475 located in the turkish city of constantinople. in 1652 coffee house popularity was growing throughout europe, then arrived in england. an english merchant who imported turkish coffee had two of his servants leave him, to go into business for themselves ... "the turk's head" coffee house was born. the word "tips" was first used in the english coffee houses for gratuities. a jar with a sign read: "to insure prompt service" sat on the counter, you'd put a coin in the jar to be served quickly.
